June 23, 2008 Easy Cooking: Omelette
Love muffins, I know usually on the Easy Cooking I bring you stuff that can be used for an early dinner and lunch. This week I think it’s time to stop neglecting the most important meal of the day, breakfast. In order to get your day started, you need your fuel and protein. This recipe is super duper easy, not to mention, yummy! You can be creative and add sausage (if that’s what you like) or tomatoes, cheese or anything. INGREDIENTS:
* 1/2 onion, diced
* 1 tbsp olive oil
* 4 eggs, beaten
* 1 tbsp butter or margarine
* salt and pepper to taste
* 1 red or yellow bell bepper, chopped
* 1 green bell pepper, chopped
* 1/2 tsp garlic powder (optional)
PREPARATION:
Sautee the onion in olive oil for 3 to 5 minutes. Add the bell peppers, and cook for another minute or two.
Add the onions and peppers to the beaten eggs and combine well.
In a large skillet or frying pan, heat the butter or margarine and pour in the egg mixture.
Sprinkle with a dash of salt and pepper and the garlic powder.
Allow to cook until the bottom of the eggs are lightly golden brown, the either flip or fold in half and cook for a few more minutes.

I cooked a simlilar omlette for hubbyFAB this past weekend. But being down south, I also fixed biscuits, grits, turkey bacon, and pancakes!
