May 26, 2008 Easy Cooking: Taco Salad

Taco Salad May 2008In the Summer we all want something easy to make. Instead of going to Burger King or McDonald’s for the dollar menu – we should focus on something more healthy. This is a favorite recipe of mine and extremely easy to make (also good for a side dish on Memorials Day). This recipe is made with ground turkey, but vegetarians can replace the meat with tofu or just use an assortment of beans (just don’t forget the beano).


Ingredients:
4 flour tortillas
Aluminum foil
Cooking Spray-canola or Olive Oil
1 pound of ground turkey (or tofu)
2 tablespoons of McCormicks Salt Free All Purpose Seasoning
4 tablespoons of Chili Powder
Shredded Lettuce
2% Milk Cheddar Cheese or 2% Milk Mexican Cheese (Kraft is good)
1 tablespoon Low Fat Sour Cream

Pico de Gallo:
1 whole tomato
1/2 onion (doesn’t matter what kind)
juice of one lime
1 tablespoon olive oil
2 tablespoons chopped fresh cilantro
1/2 teaspoon black pepper
1/2 teaspoon of salt
2 teaspoons of garlic powder (if you’re more advanced 1 medium clove)
1 jalapeno pepper (if you like the extra spice)

Instructions:
Brown ground turkey, add McCormicks Salt Free All Purpose Seasoning, and chili powder while browning. Drain the meat then set aside. Ball the aluminum foil into a dense ball that fits in the palm of your hand so that your fingers just sit on top of the ball. Next, spray cookie sheet and aluminum ball with cooking spray and lay tortilla over the aluminum ball. Form the tortilla over the ball so that it resembles the taco shell you may be used to seeing. Place in a 350 degree oven for about 3 minutes, the shell will be done but not very brown, but it will be crispy. For the Pico de Gallo, dice and seed tomato, and chop onion. Add all ingredients in a bowl and mix and refrigerate. For better pico de gallo, it’s good to make ahead of time so the flavors have time to marinate. Last step is to layer everything in the shell the way you like it and enjoy!

Depending on the type of tortilla you buy, the taste of a baked shell may be a little sweet. It gives it an extra edge and is delicious. So try it and your friends will love you for being able to help them keep their splendiferous figure. Also the tortillas can be laid flat and make baked chips and use the pico de gallo as a salsa for a healthy delicious late night snack.
